1st Course
House made rye blini topped with a chilled 63C egg, dressed with Osteria caviar and house crème fraiche.
2nd Course
Roasted baby carrot salad with crisp carrot chips, cured Diakon radish, spicy mixed greens, accompanied by a yogurt foam and puffed tri-colored quinoa.
3rd Course
Seared swordfish steak with a light parsnip mousse, wild mushroom pudding, roasted brussel sprouts, and a wasabi apple gel.
4th Course
Slow roasted herb crusted beef tenderloin with a celery root puree, wilted rainbow chard, smoked compound butter, and bacon red wine jam.
5th Course
A decadent chocolate cake topped with white chocolate nuage, cappuccino semifreddo, raspberry gelee, and garnished with drunken Virginia peanuts.
